Project Description: This is a beginning project that invites youth ages 9+ to begin learning about several techniques of home food preservation and sharing their learning with others in their communities.
Age Range: 9+
Maximum Number of Participants: 8
Meeting Location: Mitchell home in North Irvine (near Culver & 5 fwy)
Meeting dates/times: 3rd Saturday of the month, 1:00-5:00 pm starting in October. No December meeting.
Students must successfully complete a Beginning Food Preservation project before participating in the Junior Master Food Preserver (Advanced Food Preservation) Project. If students haven't done that yet, LET'S TALK!
Students are highly encouraged to enter their preserved foods in the 2019 Orange County Fair.
Competitions/Showmanship: Food Fiesta, Presentation Day, Imaginology, OC Fair, others TBD
Estimated costs: Varies. $10 per meeting to cover the cost of materials, supplies, and food. Students will take their products home. Costs may vary depending on food competitions and/or foods prepared.

- Learn a variety of food preservation methods while safely making delicious foods to enjoy later - like jams & jellies, pickles, sauerkraut, dehydrated fruits & vegetables,
- Explore fun facts about nutrition, produce, and the history of food preservation
- Engage real life application of science and mathematics, such as heat transfer, chemistry, and measuring
- Identify common equipment and supplies needed for preservation methods
- Learn how to pick the best produce for preserving
- Review basic food handling and food safety practices
- Practice safe kitchen skills - such as cutting with knives and handling boiling water
- Participate in Presentation Days, Food Fiesta, Field Days, and/or other connections with the community to share what you've learned and educate others
- USDA-approved food preservation methods may include: water bath/steam canning, dehydration, pickling, fermenting, pressure canning, freezing
